The other day I was about how thinking about lunch with literally only 10 minutes to spare.  I opened my fridge to see what I can combine together in such a short time and I am happy to share this wonderful Quesadilla recipe that is so healthy and delicious, you can knock yourself out with almost anything you can find and combine.

Quesadilla is one Mexican dish that is so easy to make, you can almost never go wrong with it.  All you need is chop, shave, sprinkle, and flip, and in 5 minutes you are presented with a meal or even midnight snack.  For me, it’s like another version of a mini pizza, and the best thing is, sweet or savory it is always a treat.  One of the secrets is to find the good Tortilla and in Jakarta, the best I can find is this Rositas WrapUps (picture) below...

Hey Foodies, read up!  Starting this week, there is a very special and exciting event going on in Jakarta.  It is called EAT JKT, one month eating festival, where top notch restaurants in Jakarta showcase special set menus priced at Rp100K, 200K, 300K and above.  Ridiculous, I know!

What does this mean for us? Having lived in Indonesia all these years, I learn to love eggplant in so many different ways.  I have them cooked in curries, fried and smothered in fresh chili sauce, stir fried etc.  Delicious, but unfortunately not the healthiest way to cook it.

Quick and Amazing Creamy Avocado and Walnut Pasta

I admit it… I try to stay away from cream sauce most of the time, mostly because it makes me feel sluggish, heavy, and unhealthy post meal. However, once in a while my craving speaks louder than my rationale and I suddenly forget those uncomfortable feelings all together too soon.

Like this afternoon, I came back later than usual for lunch and was awfully starving (recipe for a stuffed-my-face-to-food-coma disaster).  That means, I need something quick, yummy but still healthy.  This is when this amazingly creamy recipe comes in handy, because it does not have the unhealthy cream, but still hit the spot!  Instead it is packed with the goodness of avocado that makes our next blood test screaming for happy HDL.

I love quick and easy recipes, especially in the morning, when 5 minutes more sleep is a lot more valuable than tinkering with complicated ingredients in the kitchen!  It is definitely too early to be creative =)
